Ok, let me give you some answers to your above questions:

The speed mainly depends on the selected course. The average speed is around 22km/h where some skaters reach 35+ km/h on straight and flat roads and even more downhill. But don't worry about the speed, there are many skaters unable to follow the high speeds and the field is big enough to follow. Start more in the front part, worst case, you will end up at the end at the next stop. There are regular stops every one and then kilometer to enable slower skaters to catch up.

There is only one route which could be called a "hill" route. This one is about 600-800 metres long and about 100-150 metres high (guessed). All other routes just contain bridges and tunnels which I wouldn't name "hill"

Yes. If you follow the guidlines, you should be fine. You urgently need to have some comunication skills, the ability to drink some beer after the tour and to lough at skating, even if it should start to rain.
